Add the olives, red peppers, sundried tomatoes, and garlic cloves to a food processor, and pulse until blended.
Add the apple and olive mixture to a medium bowl and toss to coat. Set aside
Stuffed the pork chops with cheese and divide the filling between the pork chops, and secured them with toothpicks.
In a small bowl, combine the oregano, rosemary, thyme, salt, and pepper. Rub both sides of the pork chops with the spice mixture.
Carefully arrange the stuffed pork chops in the air fryer basket.
Cook for 10 minutes; carefully flip the chops and cook for another 6 to 8 minutes
Remove from the air fryer and let it rest for 5 minutes before serving. Enjoy!
