MORE ABOUT ME
Hello, friends! My name is Veronica. I am; the photographer, self recipe food stylist, recipe developer, and creative content creator behind Enjoy Clean Eating!
WHEN DID MY HEALTHY LIFESTYLE BEGIN AND WHY?
My clean eating journey began four years ago when my husband and I were dealing with infertility issues and trying to get pregnant. While we were looking for an answer on why we had three miscarries, and why it was taking so long to get pregnant. Veronica's clean eating journey; eating healthy for me is more than just the way I look; it is about the way it makes me feel
WHAT KIND OF TEST AND TREATMENTS DID I HAVE?
We had all kinds of infertility tests done, and we were both on medication to get pregnant, but it didn't work.
We did three rounds of IUI (intrauterine insemination) knowing our chances to get pregnant were very low, so that didn't work either, and we were devastated.
Our last chance was to do IVF (in vitro fertilization) but still our chances to get pregnant and have a baby were very low.
WHY WERE YOU NOT GETTING PREGNANT?
While I was trying to convince myself to go for the IVF because I didn't know if I could handle another devastating news, I asked my husband and my doctor; to give me some time to get myself prepared emotionally for the outcome of the IVF.
As I said before the chances were very low due to my husband sperms counts and my unknown infertility conditions.
HOW DID I CONVINCE MY HUSBAND TO GET HEALTHIER?
One day, I asked my husband; to joined me on a healthy eating
Since we both don't like drugs, he was agreed to join me, and our bodies got cleaner.
Most importantly, our bodies got healthier, and we got pregnant without any medication or the need for IVF.
Now we have not only one but two healthy toddles, you see them all the time on my Instagram story.
WHAT ABOUT COOKING?
Cooking hasn't always been fun and enjoyable for me, or I've enjoyed eating all the veggies and fruits my entire life.
WHEN DID YOU START COOKING?
My first solo cooked meal was when I was 12 years old. I still remember the simple lunch like it was yesterday.
My grandma asked me to cook lunch while she went to an appointment. I remembered how I marinated the chicken and started cooking it, and I didn't burn the house.

It was something else that needed to be cooked to eat the chicken. Then I cooked white rice, and I didn't burn the house either. That was a win-win.
From my grandma's words; it was the most delicious chicken and rice she had eaten all her life (I think, she was starving).
Since that day I started cooking almost every weekend for the family, then a few years later, it wasn't fun or enjoyable anymore.
When I moved to live all by myself, was when I started to get back to enjoy cooking, because I cooked whatever I wanted.
I didn't have a lot of time to cook because I was working full time and also I was in college full time, Meal pre was my best friend at that time.
