- Turn the pressure cooker on to the Sauté setting. When the screen read HOT Add the onion, red and green bell peppers, saute until slightly tender 3 to 5 minutes
- Remove the peppers and onion from the pot, set aside. Deglaze the pot with chicken broth
- Add chicken, fajita seasoning and diced tomatoes on top of the chicken along with lime juice.
- Turn off or cancel the saute setting. Place the lid on the pot and lock it in place. Turn the steam release knob to the Sealing position (or DON'T press the release knob if you have the newest models). Press the Pressure Cook/Manual button (or dial) and the + or - button (or dial) to choose 2 minutes. The pot will take a few minutes to build up the pressure before the timer starts.
- When the cooking cycle has finished, let the pot sit undisturbed for 10 minutes. Then do a Quick Release of the remaining pressure by turning the knob towards the Venting position (or pressing the release knob). When the metal pin in the lid drops down, you can open the cover facing away from you.

- 1 large sweet onion, cut into strips
- 1 red bell pepper, cut into strips
- 1 green bell pepper, cut into strips
- ¼ cup unsalted chicken broth
- 1 (14 oz) can diced tomatoes
- 1 lime juice
- ¼ cup chopped cilantro
