I wanted to recreate our favorite Healthy Mediterranean chicken recipe in the instant pot.
I tried this recipe severe times to come with the perfect time to pressure cook and get the same flavors as if I cook it on the stovetop and OMG! It tastes even better, and the cooking time is less, and you don't lose all the flavors with the steam.

Chicken breasts: boneless and skinless
Salt and pepper to taste: careful with the salt because we're using other ingredients with salt.
Olive oil: To sear the chicken and saute the veggies
onion: is a key ingredient in any Mediterranean dish
garlic: The garlic in this recipe will add so much flavor to the sauce.
sun-dried tomatoes in olive oil: the one in olive oil taste much better
salt-free Italian seasoning: An Italian seasoning with a great mix of dry herbs is all you need
chicken broth or stock: Unsalted is better
kalamata olives: If you don't have this you can add any olive you have on hands
artichoke hearts: You can substitute this one with roasted red pepper
lemon juice: freshly squeezed
Fresh parsley: for garnish (optional)
How to make instant pot Mediterranean chicken

Step 1. Cut chicken breast in half lengthwise pat dry with paper towel; season with salt and pepper ( be careful with the amount of salt).
Step 2. Turn the pressure cooker on the saute setting. Add olive oil; when it is hot (when the screen read HOT), place the chicken breast and cook until golden brown on both sides 2-3 minutes per side. Set aside.
Pro tips: once you place the chicken breast, don't move it until you're going to turn it. It is going to give the golden brown color we're looking for.
Step 3. Saute onion, garlic, sun-dried tomatoes, and Italian seasoning for 2 minutes. Add chicken broth or stock to deglaze the pot; add chicken breast, kalamata olives, artichokes hearts, and lemon juice.

Step 4. Place the lid on the pot and lock it in place. Turn the steam release knob to the Sealing position. Cancel the Sauté setting and then press the Pressure Cook/Manual button (or dial) and the + or - button (or dial) to choose 2 minutes. The pot will take a few minutes to build up the pressure before the timer starts.
Other cooking time options: If you want the chicken breast juicy cook for 0 minutes and naturally release until the floating valve (metal pin) is completely dropped.
If you want it to fall apart, cook for 5 minutes.
Step 5. When the cooking cycle has finished, let the pot sit undisturbed for 5 minutes. Then do a Quick Release of the pressure by turning the knob towards the Venting position. When the pin in the lid drops down, you can open it facing away from you.
Step 6. Press the saute button again, and let the sauce reduce to your desired consistency. Garnish with parsley, Serve with a side of your choice.

Because the purpose of first searing the chicken or any meat is to give it an incredible depth of flavor, and of course, provide an appealing color. Still, it also helps in cutting the pressure cooking time, especially for chicken breast.
Why do you need to sautee the aromatic ingredients?
Sauteeing the aromatic ingredients (aka onion and garlic) will unleash their true potential. Because pressure cooking will magically preserve their pungent flavor, and we need all those flavors to come out and infused our Mediterranean chicken.
How to do the quick release?
To release the remaining pressure, move the venting knob to the venting position. Before opening the lid, make sure the floating valve (metal pin) is completely dropped.

- 2 Tablespoons olive oil
- 1 medium onion, chopped
- 1 teaspoon minced garlic
- ¼ cup sun-dried tomatoes in olive oil
- 1 Tablespoon salt-free Italian seasoning,
- 3/4 cup unsalted chicken broth or stock
- 1/3 cup kalamata olives, rinsed and drained
- 1/2 cup artichoke hearts, rinsed and drained
- 1 Tablespoon lemon juice freshly squeezed
- Fresh parsley for garnish (optional)

If you have an 8 quart instant pot, should you use more liquid? If so, how much? Thanks!!

Hi Maggie! In an 8qt, use 1.5 cups of chicken broth will work with this recipe because the chicken releases a lot of liquid.

This recipe was great! The whole family loved it! I’m totally new to this, so quantities of each ingredients really matter to me. Not sure if you have a way to allow people such as myself to adjust the yield setting so that it can re-calculate the quantity of ingredients needed?
