If you love crispy roast potatoes, these air fryer roasted baby potatoes are the perfect side dish and the best way to make them without using lots of fat and oil.
You’ll be delighted to see that using the air fryer gives you the crisp finish while keeping the insides of the potato light and fluffy.
Ingredients
To make baby potatoes in an air fryer, you will need:
- Baby potatoes - halved. No need to peel them, but be sure to give them a thorough wash before cooking.
- Olive oil. Other types of oil will work too, but olive oil has the best flavor.
- Minced garlic.
- Fresh rosemary - finely minced.
- Fresh thyme - finely minced.
- Smoked paprika.
- Salt pepper - to taste.
- Fresh chopped parsley. To garnish.
How to make the recipe
- To make these gorgeously crispy mini gold potatoes, begin by adding your halved potatoes to a large mixing bowl and drizzling them with olive oil. Next, add the minced garlic, rosemary, thyme, paprika, salt, and pepper and mix well to coat.
- Next, transfer the potatoes to the air fryer basket and air fry to 370°F for 25 to 30 minutes, tossing occasionally. Cook until the potatoes are golden and crispy.
- Remove from the basket and sprinkle with freshly chopped parsley to serve.
- Try not to eat them all at once!
Recipe tips
- Baby gold potatoes make delicious air fryer mini potatoes because of their starch content, which means that they go flakey in the middle. Red or purple potatoes also work well because they are waxier and have a lower starch content, which means they slice more cleanly.
- If you find it fiddly to peel and mince garlic, I’d highly recommend investing in a garlic press and even a garlic peeler.
- Make sure you shake or stir your potatoes around during cooking to prevent them from sticking to the fryer.
How long to cook baby potatoes in air fryer
The cooking time in the air fryer is usually between 25 and 30 minutes at 370°F. The time will vary depending on how big the potatoes are and how crispy you like them!
If you can easily pierce your potato with a fork and it slides straight off again when you lift it, then it’s done!
What to serve with baby potatoes
One of the best things about this air fryer baby potatoes recipe is how many dinner options it opens up for you!
- One of my favorite options is serving up a helping of crispy air fryer small potatoes alongside a hearty classic like this instant pot turkey thighs stew. The potatoes are just the thing to mop up any leftover sauce.
- I also like this roasted baby potatoes air fryer recipe as part of a classic roast dinner. They’re lovely with these easy air fryer chicken thighs and a side of green beans. You could even throw in some healthy roasted Brussel sprouts with bacon if you want to take your meal to the next level.
- Mini potatoes in air fryer are also a fantastic companion to a tray full of roasted veggies like onion, zucchini, tomatoes, and peppers and a helping of lean sausage.
How to store your crispy mini potatoes
You can store crispy small potatoes in the fridge or freezer.
If I ever find myself with too many potatoes, I like to make a batch and freeze them as a super easy freezer meal option! Freezing air fryer potatoes is also a great way to use up potatoes before they go off.
To store your potatoes in the fridge, seal them in an airtight container. They will keep for up to four days.
To store your potatoes in the freezer, I’d recommend splitting them into portions, again in airtight containers. They will keep for up to three months in the freezer.
How to reheat little potatoes in air fryer
To reheat your potatoes, spray them with olive oil a couple of times, and then reheat in the air fryer to 380°F or for 5 minutes or until they are crispy.
If you are reheating from frozen, increase the time to 15-20 minutes.
You can also use the oven to reheat air fryer potatoes. Set the temperature to around 400°F and use the exact timings as above.
How to season baby potatoes
The combination of smoky paprika, garlic, thyme, and rosemary is one of the most delicious ways to season baby potatoes because the flavors complement one another. Smoky paprika is the perfect companion to earthy, spicy garlic and fresh rosemary and thyme.
That being said, there’s no reason you can’t experiment to find your favorite combinations! For example, try using turmeric, paprika, and a little chili for a spicy potato, or a mix of cumin and za'atar if you want to create a slightly floral flavor.
Do you have to boil potatoes before frying them?
Nope! Many recipes recommend boiling potatoes before frying them, but you don’t need to add this extra step with the air fryer.
I’ve made this roasted small potatoes air fryer recipe as simple as possible so that it suits people who are short on time. You don’t need to pre-boil your potatoes, and you don’t even need to peel them!
What is the best way to store potatoes at home?
The best way to store potatoes at home is in either an open bowl or a paper bag in a cool, dry place like a pantry out of direct sunlight.
The main reason that potatoes sprout or go moldy is that they have accumulated moisture. So, when you’re storing potatoes at home, be sure to keep them somewhere dry where the air can flow around them. Don’t store them in plastic bags with no ventilation, as this will cause moisture to accumulate.
