This Loaded Mashed Cauliflower Instant Pot recipe is delicious and easy to make. With ingredients like butter, garlic, sour cream, and heavy cream plus loaded with bacon and melted cheese, the perfect keto side dish. This instant pot mashed cauliflower is ideal if you are looking for a simple mashed cauliflower.
Instant pot loaded mashed cauliflower
These are great if you start on a low carb diet and have been missing mashed potatoes. While they don't have the same flavor and texture as mashed potatoes, they are still very satisfying!
Ingredients to make loaded mashed cauliflower:
- Cauliflower florets: You can use frozen cauliflower florets or a medium head cauliflower.
- Water: if you feel fancy, chicken, or vegetable broth works great, but either of them won't add many flavors. I did use simple water.
- Garlic: add garlic cloves to cook with the cauliflower, or you can add it when blending or even use roasted garlic.
- Butter: organic and unsalted is better.
- Bacon: crispy bacon bits. Now I only make the bacon in the air fryer so good and makes clean-up a breeze.

How to make loaded mashed cauliflower in an instant pot
Making loaded mashed cauliflower in the instant pot is pretty easy, and it doesn't take a lot of time. The result is a creamy and delicious loaded cauliflower mash even the cauliflower hates are going to devour.
STEP. 1 Add water into the inner pot of your Instant Pot.
STEP 2. Place steamer basket or trivet inside the Instant Pot.
STEP 3. Add the cauliflower florets to the basket inside the Instant Pot.
STEP 4. Place the lid and lock it in place. Turn the steam release knob to the Sealing position. Select the manual/pressure cook button and choose 3 minutes of high pressure. The pressure cooker will take a few minutes to build up the pressure before the timer starts.
STEP 5. When the cooking time is finished, do a Quick Release of the pressure by turning the knob towards the Venting position. When all the pressure is released, and the lid's pin drops down, open the lid facing away from you.
STEP 6. Remove the steamer basket from the instant pot. Transfer the cauliflower to a food processor or blender.
STEP 7. Add garlic, butter, sour cream, heavy cream, salt, and pepper to the food processor; puree until smooth.
STEP 8. Transfer the cauliflower to a serving dish. Immediately stir in most of the cheddar cheese, bacon bits, and green onions. Reserve a little of each for the topping.
STEP 9. To serve, garnish with the reserved cheddar, bacon, and green onions.
TIPS TO MAKE THIS INSTANT POT LOADED MASHED CAULIFLOWER
- Use a medium cauliflower head or frozen cauliflower florets.
- Air Fry the bacon so perfectly crispy bacon.
- If you don't have a food processor, you can use a potato masher or even a fork.
Can you freeze instant pot loaded cauliflower?
No! loaded mash cauliflower is not a freezer-friendly recipe. But if you want to freeze mashed cauliflower, you can do it without adding the sour cream and heavy cream.
To freeze only the cauliflower mash, let it cool completely, place in Ziploc bags, label with content, storage date and quantity of mashed cauliflower.
Tawn overnight in the refrigerator and reheat a low heat, then add the ingredients to make loaded mashed cauliflower.

This instant pot loaded mashed cauliflower could be your new low carb alternative to the classic side dish of loaded mashed potatoes.
Ingredients
- 4 cups cauliflower florets
- 1 cup water or chicken broth
- 2 cloves garlic, minced
- 2 Tablespoon butter
- 2 Tablespoon sour cream
- 1 Tablespoon heavy cream
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/3 cup cooked bacon bits
- Green onion for garnish
Instructions
- Add water into the inner pot of your Instant Pot.
- Place the steamer basket inside the Instant Pot.
- Transfer the cauliflower florets to the basket inside the Instant Pot.
- Place the lid on the pot and lock it in place. Turn the steam release knob to the Sealing position (or DON'T press the release knob for the newest model). Press the manual/pressure cook button (or dial) and the + or - button (or dial) to choose 3 minutes of high pressure.
- When the cooking time is finished, do a Quick Release of the pressure by turning the knob towards the Venting position (or pressing the release knob). Once all the pressure is released. The metal pin in the lid drops down; you can open the lid facing away from you.
- Remove the steamer basket from the instant pot. Transfer the cauliflower to a food processor or blender.
- Add garlic, butter, sour cream, heavy cream, salt, and pepper to the food processor; puree until smooth.
